Ready Steady Cook at Belvidere Good Food Club

Every week Hannah from Belvidere Good Food Club collects her Food Hub Box of food for her cooking club for young people. She is brilliant at ready steady cooking with the random food we give her. Here's what she made on the day we gave her cauliflower, pineapple and some tortillas - delicious!

Spicy cauliflower and pineapple wraps

  • 1 cauliflower

  • 3 tablespoons olive oil

  • 1 tablespoon garam masala

  • 1 pineapple

  • Chopped tomatoes or a jar of salsa

  • 1 small red/white onion

  • A small bunch of coriander (optional)

  • Wraps / tortillas

Preheat oven to 390°F/200°C. Wash the cauliflower and break it into small pieces. Mix together the oil and garam masala with the cauliflower. On a baking sheet cook in the oven for about 30 minutes. Check regularly that the cauliflower is not burning. Finely chop the onion and the coriander. Warm up the tortillas in the microwave or briefly in a frying pan. Then layer some salsa or tomatoes over the tortilla. Add the roasted cauliflower and top with onion and coriander. (Adapted from contentedcooking.com)
